Veggie Stuffed Turkey Meatloaf

  1. Begin by preheating the oven to 350 degrees F and preparing the baking pan with nonstick cooking spray.
  2. Use a box grater to grate the zucchini and onion.
  3. Combine turkey, zucchini, onion, eggs, oatmeal, ketchup, and salt and pepper as well as Italian dried herbs in a medium bowl.
  4. With clean hands, mix until combined, being careful not to over mix.
  5. Transfer mixture to baking pan and form into a loaf.
  6. Top with ketchup.
  7. Bake for 1 hour or until an instant read thermometer reads 165 degrees F.
  8. Enjoy!
