Lemon Basil Chicken

  1. In a small bowl, combine the mustard and yogurt.
  2. Place chicken thighs in an oven-proof dish (at least 1 1/2" deep).
  3. Pour yogurt mixture over chicken.
  4. Sprinkle with lemon rind, juice and chopped basil.
  5. Add black pepper to taste, if desired.
  6. Bake in a moderately hot 375 degrees F oven for 25 minutes.
