A Fantastic Flank Steak

  1. Prepare the marinade: In a large bowl whisk together the mustard, vinegar, oregano, salt and pepper.
  2. Slowly drizzle in the olive oil, whisking constantly until thickened; add the garlic.
  3. (Or make marinade a day ahead and store, covered, in the refrigerator.

  5. Add the flank steak to the marinade and turn it to coat well.
  6. Cover and marinate in the refrigerator for about 8 hours, turning the steak once or twice.
  7. Remove from the marinade and pat dry.
  8. Broil or grill the steak over high heat, 3 inches from heat source, 4 minutes per side for medium-rare.
  9. Remove to a cutting board and let rest 10 minutes before slicing.
  10. Slice the steak thinly on the diagonal and arrange on a platter.
