Banana Snack Cake (Gift Mix in a Jar)

  1. Creating the Gift in a Jar:
  2. Wash and thoroughly dry a 1-quart wide-mouth canning jar.
  3. Layer the ingredients in the jar as listed above starting with the flour, salt, baking soda, sugar, brown sugar and then walnuts - make sure to press firmly with a flat bottomed object after each addition; make the layers as level as possible.
  4. Secure the lid and decorate as desired; attach the instructions for making these cookies found below.
  5. BANANA SNACK CAKE GIFT TAG:
  6. Additional ingredients to be added by the recipient: 1 cup mashed ripe bananas, 1/2 cup buttermilk, 1/2 cup solid shortening (Crisco) and 2 eggs.
  7. BANANA SNACK CAKE INSTRUCTIONS:
  8. Preheat oven to 350.
  9. In a large bowl, blend the bananas, buttermilk, shortening and eggs.
  10. Add the contents of the jar and stir well.
  11. Pour the batter into a generously greased 8x8 inch pan.
  12. Bake for 30-35 minutes or until a toothpick inserted in the center of the cake comes out clean.
  13. Cool for 5 minutes in the pan, then remove the bread and cool completely on a wire rack.
  14. Store in an airtight container for up to 1 week.
