Malabar Coconut Shrimp

  1. Heat oil in large skillet on medium-high heat.
  2. Add next 4 ingredients; stir and cook 30 sec.
  3. or just until seasonings start to pop.
  4. Add onions, garlic and ginger; cook and stir 5 min.
  5. or until onions are crisp-tender and lightly browned.
  6. Add all remaining ingredients except fresh coriander and lemon juice; cook 5 min.
  7. or until shrimp turn pink, stirring occasionally.
  8. Transfer to serving bowl; stir in coriander and lemon juice.
