Chili Skillet Dinner Recipe
- 1 pound grnd chuck
- 1 c. minced green onion
- 1/2 c. minced green pepper
- 1 lg. clove garlic, chopped
- 4 teaspoon chili pwdr
- 1 teaspoon oregano
- 1 (8 ounce.) can tomato sauce
- 1 c. tomato juice
- 1/2 c. raw long grain rice
- 1 (15 ounce.) can red kidney beans, liquid removed
- 1 c. frzn whole kernel corn
- 1 tbsp. parsley flakes
- 1 c. sliced ripe olives
- 1 c. shredded cheddar cheese
- Saute/fry beef in large saucepan, stirring to break up, till meat is gray.
- Add in onion, green pepper and garlic.
- Saute/fry till limp.
- Stir in chili pwdr, oregano, tomato sauce and juice.
- Bring to boil.
- Add in rice.
- Cover and simmer about 25 min.
- Add in beans, corn, parsley flakes and olives, mixing well.
- Cook about 10 min longer.
- Adjust seasonings.
- Sprinkle cheese over top.
- Let stand, covered, about 5 min to heat cheese.
- Serve with tossed salad and warm bread.
- Makes 4 servings.
