Herb and Lemon-Scented Tilapia
- 1 cup minced fesh Italian parsley
- 12 cup minced fresh chives
- 34 teaspoon salt, divided
- 12 teaspoon black pepper, divided
- 1 -2 garlic clove, minced
- 1 lemon, large
- 1 lb tilapia fillet
- butter or olive oil flavored cooking spray
- 4 tablespoons butter, divided
- Combine parsley, chives, 1/2 teaspoon salt, 1/4 teaspoon pepper and garlic on a platter.
- Grate peel from lemon over the mixture.
- Toss to combine.
- Reserve lemon.
- Spray tilapia fillets with nonstick cooking spray.
- Press fillets into herb mixture to coat both sides.
- Melt 2 Tbls.
- butter in large skillet over medium heat.
- Add tilapia.
- Cook 3-4 minutes per side or until fish flakes easily when tested with a fork.
- (Cook time will vary according to thickness of fish.)
- Transfer to serving platter.
- Keep warm.
- Add remaning 2 tablespoons of butter to skillet; melt over low heat.
- Cut lemon in half; squeeze juice from on half into skillet.
- Stir remaining 1/4 teaspoon salt and 1/8 teaspoon pepper into lemon-butter mixture.
- Pour over fish.
- Slice remaining lemon half for garnish.
- Serve immediately.
