Ranch Muffins
- 2 cups flour
- 1/2 cup sugar
- 1 Tbsp. Magic Baking Powder
- 1/2 tsp. salt
- 1/8 tsp. baking soda
- 1/2 cup Renee's Ranch Dip
- 3/4 cup skim milk
- 1/4 cup cholesterol-free egg product
- 1/4 cup non-hydrogenated margarine, melted
- 1/2 cup Cracker Barrel Shredded Double Cheddar Cheese
- Heat oven to 425 degrees F.
- Combine first 5 ingredients in large bowl.
- Mix dip, milk, egg product and margarine until blended.
- Stir in cheese.
- Add to flour mixture; stir just until moistened.
- (Batter will be lumpy.)
- Spoon into 24 muffin pan cups sprayed with cooking spray.
- Bake 15 to 20 min.
- or until toothpick inserted in centres comes out clean.
- Cool in pans 5 min.
- Remove to wire racks; cool completely.
