Taco Meatloaf
- 1 12 lbs lean ground beef
- 1 (8 ounce) can tomato sauce
- 12 cup soft breadcrumbs
- 12 cup chopped onion
- 14 cup chopped green pepper
- 2 tablespoons chopped green chilies
- 1 egg
- 1 (3 1/4 ounce) package taco seasoning mix
- 1 cup shredded sharp cheddar cheese
- 1 cup sour cream
- corn tortilla chips
- Mix together meat, tomato sauce, bread crumbs, onion, green pepper, chilies, egg and seasoning mix.
- (I put in almost the whole can of Ortega chopped peppers.)
- Press half the mixture into a 6-cup glass ring mold or 9"x13" loaf pan.
- Top with 2/3 of cheese.
- Then put remaining meat mixture and top with remaining cheese.
- Bake in 375 degree oven (cold start) for 45 to 50 minutes.
- Microwave: On High for 10 to 12 minutes, turning every 4 minutes.
- Drain off fat.
- Turn out on serving dish, garnish with sour cream and chips.
- Serves 8.
