Tortellini and Spinach Soup
- 1 onion, chopped
- 14 cup bacon bits (the real bacon bits)
- 2 garlic cloves, minced
- 2 (900 ml) boxes vegetable broth
- 12 ounces cheese tortellini
- 10 ounces frozen spinach, thawed and chopped
- 4 tablespoons parmesan cheese, shaved (optional)
- Saute onions, bacon bits and garlic cloves until onion is translucent.
- Add vegetable broth and bring to a boil.
- Add Tortellini and cook according to package directions.
- 3 minutes before tortellini is cooked, add spinach.
- Garnish with parmesan cheese.
