Tortellini and Spinach Soup

• 1 onion, chopped
• 14 cup bacon bits (the real bacon bits)
• 2 garlic cloves, minced
• 2 (900 ml) boxes vegetable broth
• 12 ounces cheese tortellini
• 10 ounces frozen spinach, thawed and chopped
• 4 tablespoons parmesan cheese, shaved (optional)

1. Saute onions, bacon bits and garlic cloves until onion is translucent.
2. Add vegetable broth and bring to a boil.
3. Add Tortellini and cook according to package directions.
4. 3 minutes before tortellini is cooked, add spinach.
5. Garnish with parmesan cheese.
