Southwest Shrimp Ceviche
- 1 packages Salad shrimp
- 2 Avocados diced
- 1 can Black beans
- 1 can Corn
- 1 bunch Fresh cilantro
- 1/2 packages Cherub tomatoes cut in half
- 1 cup Extra-virgin olive oil
- 1 Juice of lemon
- 1 Juice of lime
- 1 cup Finely chopped red onion
- 2 Serrano peppers cleaned & finely chopped
- 1/4 tsp Kosher salt
- 1/4 tsp Pepper
- Chop and dice said ingredients, then toss together in large bowl.
- Serve with favorite chip or cracker.
