Summer Salad
- 2 stick celery
- 10 small cherry tomatoes
- 10 grapes/ green or red
- 1 medium red onion / fine choped
- 1 half cucumber / choped
- 3 medium carrots / grated
- 4 spring onions / fine choped
- 1 can sweetcorn / drained
- 1 can salad beans / or mixed beans
- 25 sultanas
- 1 apple / choped
- 1 cup green cabbage / fine choped
- 1 yellow sweet pepper / choped
- 4 radish / fine sliced
- 5 tbsp mayonaise / judge this on the day
- 3 tbsp salad cream
- 200 grams pasta / any to hand cooked aldente
- Chop all ingredients to similar size and mix in large bowl, add mayo and salad cream and mix well.
- Cover and fridge for 2 hours minimum, this will allow pasta to absorb excess liquids.
- Remove from fridge 30 mins before serving and add more mayo as needed, you can also add fresh basil or mint etc to your taste.
- serve with bbq or gammon / cheese / crusty bread etc.
