Pineapple Bread Pudding Recipe

  1. Mix the first ingredients till fluffy, then add in 3 Large eggs, one at a time.
  2. Into another bowl mix lowfat milk, coconut, crushed pineapple, raisins and vanilla.
  3. Blend into other mix well.
  4. Cut 8 slices day old bread into pcs and fold into mix.
  5. Pour into ungreased 2 qt casserole.
  6. Place in a large pan with 1 inch of boiling water in pan.
  7. Bake at 325 degrees for 1 1/2 hrs or possibly till knife inserted in center comes out clean.
