Simply Elegant Quiche

  1. Place shallots and white wine in a small saucepan.
  2. Bring to a boil over low heat and simmer for 2 minutes.
  3. Remove and set aside to cool.
  4. Beat eggs and cream together very gently.
  5. Fold in shallot mixture and spices.
  6. Sprinkle cheese over bottom of pre-baked crust.
  7. Pour in custard mixture.
  8. Bake at 350 degrees (175 C.) for 35 to 45 minutes, or until custard is set.
  9. Cover edges of pie crust with foil if crust gets too dark.
  10. Let quiche set for 10 minutes prior to serving.
