sticky pear and walnut upside down gingerbread
- 1 cup flour
- 1 tbsp flour
- 1/2 tsp baking soda
- 1/4 tsp salt
- 2 tsp cinnamon
- 2 tsp ground ginger
- 1/4 tsp nutmeg
- 1 pinch ground cloves
- 1 large egg
- 3/4 cup packed light brown sugar
- 6 tbsp dark unsulphered molasses
- 1/2 cup buttermilk
- 4 tbsp unsalted butter, melted
- 1 whipped cream
- 4 tbsp unsalted butter
- 3/4 cup packed light brown sugar
- 1/3 cup coarsely chopped walnuts
- 2 ripe pears, diced
- preheat oven to 350 and position rack in the middle.
- spray round cake pan.
- cream butter and sugar and spread over bottom and sides of pan.
- sprinkle pears and walnuts in pan.
- set aside.
- sift flour, baking soda, salt and spices into bowl.
- in another bowl, whisk egg, brown sugar, molasses, buttermilk and melted butter.
- gradually whisk into dry ingredients until combined.
- pour batter into pan and bake 35-45 minutes.
- remove when top of cake is firm and sides pull away from pan.
- put plate over pan and flip onto plate.
- serve warm with whipped cream
