Calypso Chicken

  1. In a large skillet, over medium-high heat, saute chicken breasts in oil until no longer pink, turning once.
  2. Remove chicken to platter; keep warm.
  3. Meanwhile, in small bowl,, combine chicken broth, lime juice and cornstarch.
  4. Mix well.
  5. In drippings remaining in skillet, saute onions, red pepper, garlic and hot pepper 2 minutes or until tender crisp, stirring often.
  6. Add chicken broth mixture; heat to boiling.
  7. boil 2-3 minutes.
  8. Add cilantro.
  9. Return chicken to skillet; heat through.
  10. 171 calories per serving.
