Linzer cookies
- 200 grams butter
- 380 grams flour
- 200 grams powdered sugar
- 1 tsp vanilla extract
- 80 grams almonds flour
- 1 apricot jam or strawberry jam
- 4 egg yolks
- 1/2 tsp baking powder
- 1 pinch of salt
- 1 lemon... ONLY ZEST
- In a bowl of an electric mixer, mix the butter (room temperature) until creamy
- Add the powdered sugar and mix.
- Than add in the same bowl, the egg yolks, vanilla extract, lemon or orange zest and mix for 2 minutes.
- Add the almonds flour, baking powder and a pinch of salt.
- Mix!
- Finally add the flour all at once.
- Mix on low speed until the dough starts to come together.
- Dump onto a surface dusted with flour and shape into a flat disk.
- Wrap in plastic and pit it in the fridge for 20 minutes.
- Roll the dough 1/4 inch and cut 2 3/4 inch rounds with a plain or fluted cutter.
- With 1/2 of the rounds, cut a hole from the middle of each round with a heart or round small shape.
- I cut them with a star shape..
- Place all the cookies on an ungreased baking sheet and chill for 15 minutes.
- Bake the cookies until the edges begin to brown.
- Allow to cool to room temperature.
- Spread apricot or strawberry jam on the flat side of each solid cookie.
- Dust the top of cut-out cookies with powdered sugar and press the flat sides together with the raspberry jam in the middle and the powdered sugar on the top
- Enjoy them with your family!
