Susanne's Almond Cookies
- 1 cup butter, softened
- 1 cup sugar
- 1 egg
- 1 cup ground almonds
- 1 tsp. salt
- 1/2 tsp. almond extract
- 2 cups flour
- Preheat oven to 350 degrees F. Beat butter and sugar in large bowl with electric mixer until light and fluffy.
- Add egg, almonds, salt and extract; mix well.
- Gradually add flour, beating until well blended after each addition.
- Roll into 42 balls, each about 3/4 inch in diameter.
- Place, 2 inches apart, on baking sheets.
- Flatten slightly with fork.
- Bake 12 min.
- or until lightly browned.
- Let stand on baking sheets 1 min.
- Transfer to wire racks; cool completely.
- Store in airtight container at room temperature.
