Susanne's Almond Cookies

  1. Preheat oven to 350 degrees F. Beat butter and sugar in large bowl with electric mixer until light and fluffy.
  2. Add egg, almonds, salt and extract; mix well.
  3. Gradually add flour, beating until well blended after each addition.
  4. Roll into 42 balls, each about 3/4 inch in diameter.
  5. Place, 2 inches apart, on baking sheets.
  6. Flatten slightly with fork.
  7. Bake 12 min.
  8. or until lightly browned.
  9. Let stand on baking sheets 1 min.
  10. Transfer to wire racks; cool completely.
  11. Store in airtight container at room temperature.
