Florentine Fish with Lemon Sauce

  1. Heat oven to 350F.
  2. Combine first 5 ingredients.
  3. Refrigerate until ready to serve.
  4. Rinse spinach.
  5. (Do not drain.)
  6. Add to large skillet; cook and stir on medium-high heat 5 min.
  7. or just until wilted.
  8. Place in colander; press to remove excess liquid.
  9. Transfer to large bowl; mix with cracker crumbs and cream cheese spread.
  10. Place half the fish in greased 13x9-inch baking dish; top with spinach mixture and remaining fish pieces.
  11. Sprinkle with pepper.
  12. Bake 15 to 20 min.
  13. or until fish flakes easily with fork.
  14. Serve topped with sour cream mixture.
