Carrot Sweet Potato Muffins

  1. Preheat oven to 400 degrees .
  2. Combine first 8 ingredients in a large bowl.
  3. Stir in carrot.
  4. Combine milk and next 7 ingredients into another bowl and stir well.
  5. Add to flour mixture, stirring just until moist.
  6. Spoon batter into 18 muffin cups coated with cooking spray.
  7. Bake at 400 degrees for 20 minutes or until done.
  8. Remove from pans immediately, and cool on a wire rack.
