Aunt Vera's Cranberry Mold
- 2 -16 ounces whole berry cranberry sauce
- 2 (3 ounce) packages raspberry Jell-O gelatin
- 12 cup boiling water
- 2 tablespoons lemon juice
- 12 teaspoon salt
- 1 (11 ounce) can mandarin oranges, drained and cut into pieces
- 1 cup light mayonnaise
- 12 cup walnuts, chopped
- Heat cranberry sauce to boil, strain and set berries aside.
- Bring juice to a boil again.
- Add the hot water to cranberry juice, dissolve jello, and add lemon juice and salt.
- Chill mixture until slightly thickened.
- Use rotary beater and beat mayonnaise until light and fluffy - add to jello mixture.
- Fold in cranberries, mandarin oranges and nuts.
- If using mold pan, spray with Pam, or a glass bowl can be used.
- Chill until firm (2 -3 hours).
