Lemon Bars

  1. Blend 1 cup flour and 1/4 cup sugar; cut in margarine or butter until mixture resembles coarse crumbs.
  2. Press mixture on bottom of 9x9x2-inch baking pan.
  3. Bake at 350F for 15 minutes or until lightly browned.
  4. Blend egg substitute, lemon juice, lemon peel and remaining flour and sugar; pour over pastry crust.
  5. Bake 15 to 18 minutes more or until set.
  6. Cool slightly; sprinkle with powdered sugar if desired.
  7. Cool completely; cut into 2x1-inch bars.
