Maple Nut Muffins

  1. Preheat the oven to 350.
  2. Lightly grease 8 muffin cups.
  3. Combine dry ingredients and set aside.
  4. Beat oil and maple syrup with a mixer for 2 mintues.
  5. Add the yogurt egg and vanilla.
  6. Slowly add the dry ingredients, mixing until just blended.
  7. Pour the batter evenly into the muffin cups.
  8. Bake for 25 minutes or until done.
