Lentil Chicken Dinner
- 1 12 cups dry lentils
- 6 cups water
- 2 lbs ground chicken
- 1 red onion
- 12 orange bell pepper
- 2 small white zucchini, diced
- 3 portobella mushrooms, diced
- 1 small jar sliced green olives
- 1 tablespoon olive oil
- Cook lentils in water until tender, drain.
- Saute mushrooms in olive oil.
- Add ground chicken and saute until browned.
- Add remaining ingredients except olives and saute until tender.
- Add lentils to chicken mixture and add olives.
- Great topped with crushed red peppers or feta cheese!
