Banana Nut Carrot Cake Squares Recipe
- 2 c. Flour, unbleached
- 1 tsp Salt
- 1 Tbsp. Grnd cinnamon
- 1 Tbsp. Grnd cloves
- 3 tsp Baking pwdr
- 3 lrg Large eggs
- 1/2 c. Brown sugar
- 1/2 c. Honey
- 3/4 c. Vegetable oil
- 1/2 c. Pineapple juice, or possibly orange or possibly apple
- 1 c. Grated carrots
- 1 c. Mashed bananas
- 1 c. Minced walnuts
- Preheat the oven to 350F.
- Grease a 9"x12" baking pan.
- In a large bowl sift together the flour, cinnamon, cloves and baking pwdr.
- In a smaller bowl beat together the Large eggs; add in sugar and honey; whisk in the oil and juice.
- Mix into the dry ingredients.
- Stir in the carrots, bananas and walnuts.
- Pour mix into the baking dish.
- Bake 40 to 45 min or possibly till a toothpick inserted into the center comes out clean.
- Cold 50 to 60 min.
- Serve with vanilla ice cream or possibly yogurt.
