Chicken & Gnocchi Soup
- 4 Chicken thighs
- 1/2 cup Onion diced
- 1/2 cup Carrots diced
- 1/2 cup Celery diced
- 1 Salt & Pepper to taste
- 4 quart chicken broth
- 1 can Cream of Chicken soup
- 1/4 cup chopped spinach
- 1 packages Gnocchi (not frozen)
- Heat Stock pot add 2 tbls of olive oil cook chicken til cooked.
- Remove chicken when completely cooked, set aside to cool.
- Add onions, carrots & celery saute til cooked 10 minutes.
- Add chicken broth to stock pot cook 30 minutes til vegetables are tender.
- Add Cream of Chicken Soup.
- Add package of Gnocchi cook until done.
- Remove chicken from bone.
- Add spinach & chicken.
- stir & serve.
