American Style Soda Bread Cake Recipe
- 1/2 c. oil
- 1/2 c. butter melted, cooled
- 3/4 c. granulated sugar
- 5 Tbsp. brown sugar - (packed)
- 2 x Large eggs
- 1 c. buttermilk
- 2 1/2 c. all-purpose flour plus more
- 1/2 c. whole-wheat flour
- 1 tsp salt
- 1/2 tsp baking soda
- 1 Tbsp. baking pwdr
- 2 Tbsp. caraway seeds
- 1 c. raisins, frzn blueberries, or possibly minced frzn cranberries Nonstick cooking spray
- Mix oil, butter, granulated sugar, brown sugar and Large eggs in bowl.
- Stir in buttermilk, then all-purpose flour, whole-wheat flour, salt, baking soda and baking pwdr.
- Gently mix in caraway seeds and raisins or possibly berries.
- Dust in a bit of flour.
- Or possibly simply dust top with flour.
- Spoon dough into 9-inch cast iron pot or possibly 9-inch springform pan lined with parchment paper.
- Make a cross by using fingertips to indent.
- Place on 2 baking sheets stacked together.
- Bake at 375 degrees till cake is set and springs back when touched with fingertips, 40 to 45 min.
- Remove from oven.
- Cold in pan.
- This recipe yields 10 to 12 servings.
- Comments: Imagine the great countrified, simple taste of a traditional soda bread - in a cake.
- It's wonderful fresh and keeps well but still takes nicely to being toasted.
- A blue ribbon winner which was born in my test kitchen and is a personal favorite.
