Pear & Plum Crisp
- 3 fresh pears, chopped Safeway 1 lb For $1.88 thru 02/09
- 3 fresh plums, chopped
- 2 Tbsp. lemon juice Safeway 4 ct For $5.00 thru 02/09
- 1 cup quick-cooking oats
- 1/4 cup whole wheat flour
- 1/4 cup roasted almonds, chopped
- 2 Tbsp. brown sugar blend sugar replacement
- 1 tsp. ground cinnamon
- 1 tsp. ground cardamom
- 1/4 cup non-hydrogenated margarine
- 1/2 cup thawed Cool Whip Light Whipped Topping
- Heat oven to 400 degrees F.
- Toss fruit with lemon juice; spoon into 8-inch square baking dish sprayed with cooking spray.
- Combine oats, flour, nuts, sugar replacement and spices in large bowl.
- Add margarine; mix with your fingers until mixture resembles coarse crumbs.
- Sprinkle over fruit.
- Bake 50 to 55 min.
- or until golden brown.
- Serve warm topped with Cool Whip.
