Mock Tuna Salad
- 15 ounce chickpeas (garbanzo beans)
- 1 each celery stalks chopped
- 1 medium carrots grated
- 1 each scallions, spring or green onions chopped
- 2 teaspoons mayonnaise, eggless
- 1 tablespoon dill relish
- 1/4 teaspoon salt
- Mash the chickpeas with a fork or potato masher, leave some chunks.
- Add the celery, carrot, green onion, mayonnaise, and relish.
- Add salt to taste.
- Serve on whole wheat bread or in pita bread with lettuce and sliced tomatoes.
