Banana Gingerbread Recipe

  1. Here's another winner from Sandra Woodruff's Secrets of Fatfree Baking.
  2. Moist, not rubbery, delicious.

  4. Combine dry ingredients and mix well until combined.
  5. Add in remaining ingredients, stir until dry igredients are just moistened.

  7. Coat an 8x4 loaf pan with non-stick cooking spray.
  8. Spread mix proportionately in the pan, and bake at 325 F for 40-45 min, or possibly just till a wooden toothpick inserted in the ceneter of the loaf comes clean.

  10. Let sit in pan for ten min, then cold completely on a wire rack.
