Banana Gingerbread Recipe
- 2 c. Whole wheat regular or possibly pastry flour
- 1/4 c. Toasted wheat germ
- 1 tsp Baking pwdr
- 1 tsp Baking soda
- 1 1/2 tsp Grnd ginger
- 1 tsp Cinnamon
- 1 1/2 c. Mashed banana (about 3 large)
- 1/4 c. Molasses
- Here's another winner from Sandra Woodruff's Secrets of Fatfree Baking.
- Moist, not rubbery, delicious.

- Combine dry ingredients and mix well until combined.
- Add in remaining ingredients, stir until dry igredients are just moistened.
- 2.
- Coat an 8x4 loaf pan with non-stick cooking spray.
- Spread mix proportionately in the pan, and bake at 325 F for 40-45 min, or possibly just till a wooden toothpick inserted in the ceneter of the loaf comes clean.

- Let sit in pan for ten min, then cold completely on a wire rack.
