Spinach and Sun-dried Tomato Pizza

  1. Preheat oven to 450 degrees F.
  2. Pre-bake your pizza dough for 5 or 10 minutes.
  3. Soak the sundried tomatoes in water for a few minutes to soften.
  4. Cut them into fourths with scissors.
  5. In a food processor combine beans, garlic, spices, salt, oil, and lemon juice until smooth.
  6. Spread the bean paste on the pizza crust and top with sun-dried tomatoes, spinach, and Parmesan.
  7. Bake for 10 minutes, until spinach wilts and cheese has melted.
  8. Enjoy!
