Spinach and Sun-dried Tomato Pizza
- 1 whole Pizza Crust
- 2 cups Sun Dried Tomatoes
- 1 can (16 Oz. Size) White Beans
- 1 clove Garlic
- 1/2 teaspoons Parsley
- 1/2 teaspoons Basil
- 1/2 teaspoons Oregano
- 1/2 teaspoons Rosemary
- 1/4 teaspoons Paprika
- 1/4 teaspoons Salt
- 1/2 teaspoons Olive Oil
- 2 teaspoons Lemon Juice
- 2 cups Packed Fresh Spinach
- 13 cups Grated Parmesan Cheese (optional)
- Preheat oven to 450 degrees F.
- Pre-bake your pizza dough for 5 or 10 minutes.
- Soak the sundried tomatoes in water for a few minutes to soften.
- Cut them into fourths with scissors.
- In a food processor combine beans, garlic, spices, salt, oil, and lemon juice until smooth.
- Spread the bean paste on the pizza crust and top with sun-dried tomatoes, spinach, and Parmesan.
- Bake for 10 minutes, until spinach wilts and cheese has melted.
- Enjoy!
