Beef and Plantain Chiles Rellenos

  1. Heat oven to 350 degrees F.
  2. Cook and stir bacon in large skillet on medium heat until bacon is crisp.
  3. Remove bacon from skillet with slotted spoon, reserving drippings in skillet; set bacon aside.
  4. Add plantains to drippings in skillet; cook and stir 5 min.
  5. or until golden brown.
  6. Transfer to bowl.
  7. Brown ground beef in same skillet.
  8. Stir in 1/4 cup tomato sauce.
  9. Bring to boil; remove from heat.
  10. Stir in bacon, plantains and 3/4 cup cheese; spoon into chiles.
  11. Place in 13x9-inch baking dish.
  12. Top with remaining tomato sauce and cheese.
  13. Bake 15 min.
  14. or until chiles are heated through and cheese is melted.
  15. Serve topped with sour cream.
