Food Remedies: Jerusalem Artichoke Potato Salad for Diabetes

  1. Rinse off the dirt well from the Jerusalem artichokes, and cut the carrots into large bite-sized chunks.
  2. Add a bit of water to a pot, cover tightly with a lid, and steam.
  3. Evaporate the water once the Jerusalem artichokes become hot and soft, and add in the sprouts and vegetarian mayonnaise.

  5. You will have a vitamin B12 deficiency if you switch to a vegetarian diet, so I recommend using broccoli sprouts.
  6. It seems that beets are also high in vitamin B12.
  7. You can also get B12 from nori seaweed or nutritional yeast.
