Fish Cakes

  1. In a large bowl mix the cod with the pepper, scallions, potatoes, parsley and all seasonings.
  2. Mix well.
  3. Sprinkle flour over, add egg and stir to combine.
  4. (You may like to add another tablespoon of flour for a heavier cake.)
  5. Heat 2 tablespoons oil and 1 tablespoon butter in a non-stick pan over medium heat.
  6. Add heaping spoonfuls of the mixture and shallow fry for about 3-4 minutes each side until golden brown.
  7. Serve with nice wedge of lemon.
