Fish Cakes
- 1 pound Cod, No Skin Or Bones Roughly Cut Into Small Pieces
- 1/4 whole Red Pepper Finely Chopped
- 3 stalks Scallions, Thinly Sliced
- 2 whole Medium Potatoes Peeled, Boiled Cut Into 1/4 Inch Peices
- 1/4 cups Chopped Parsley
- 2 teaspoons Old Bay Seasoning
- 1 teaspoon Sea Salt
- 1/2 teaspoons Black Pepper
- 2 Tablespoons Flour
- 2 whole Eggs, Lightly Beaten
- 2 Tablespoons Oil
- 1 Tablespoon Butter
- In a large bowl mix the cod with the pepper, scallions, potatoes, parsley and all seasonings.
- Mix well.
- Sprinkle flour over, add egg and stir to combine.
- (You may like to add another tablespoon of flour for a heavier cake.)
- Heat 2 tablespoons oil and 1 tablespoon butter in a non-stick pan over medium heat.
- Add heaping spoonfuls of the mixture and shallow fry for about 3-4 minutes each side until golden brown.
- Serve with nice wedge of lemon.
