Strawberry Cheesecake Minis

  1. In a small mixing bowl, beat cream cheese until smooth.
  2. Gradually beat in sugar substitute and sugar.
  3. Beat in vanilla.
  4. Add egg and egg substitute; beat until blended.
  5. Place each vanilla wafer flat side down in a foil-lined muffin cup.
  6. Fill with cream cheese mixture.
  7. Bake at 350* for 15-20 minutes or until puffed and set.
  8. Cool on wire rack for 1 hour (centers will sink slightly.)
  9. Spoon filling into the center of each cheesecake.
  10. Store in the refrigerator.
