The Easiest and Best Veggie Casserole
- 2 md. carrots
- 1 cup fresh mushrooms
- 1 can black beans
- 8 oz. corn, fresh
- frozen
- 1/4 cup bulger
- 1/4 tsp. garlic salt, powder,
- whole garlic
- 1/2 cup pearl barley
- 1/2 onion, chopped
- 1/2 cup parsley, chopped
- 1-1/2 cup vegetable broth
- 1/2 cup shredded cheese
- Mix everything except cheese, together.
- Pour in rectangular casserole.
- Place in oven at 350F for 1 hour, stir, sprinkle cheese, and bake for 15 minutes more.
- If the liquid goes away add more.
