Duck Un Kraut Recipe
- 1 duckling 4 to 5 lbs. (ready to cook weight)
- Salt
- Pepper
- 2 quarts. sauerkraut
- 1 c. water
- 3 tbsp. sugar
- Clean and rinse duck; pat dry with absorbent paper.
- Rub inside with salt and pepper.
- Place in a roasting pan; add in the sauerkraut, water and sugar.
- Cover.
- Cook in a 350 degree oven till duck is tender and golden, allowing 20 to 25 min per lb..
- Serve with creamy mashed potatoes.
- If you like, the kraut may be used as a stuffing.
- Allow 1 pound duck per serving.
