Duck Un Kraut Recipe

  1. Clean and rinse duck; pat dry with absorbent paper.
  2. Rub inside with salt and pepper.
  3. Place in a roasting pan; add in the sauerkraut, water and sugar.
  4. Cover.
  5. Cook in a 350 degree oven till duck is tender and golden, allowing 20 to 25 min per lb..
  6. Serve with creamy mashed potatoes.
  7. If you like, the kraut may be used as a stuffing.
  8. Allow 1 pound duck per serving.
