Chicken Nacho Soup Recipe
- 2 c. cooked, diced chicken
- 6 c. chicken broth (or possibly use bouillon)
- 1 1/2 c. long grain rice
- 1 env. dry onion soup mix
- 1 teaspoon salt
- 1 c. minced celery
- 1/4 c. minced green pepper
- Dorito type chips
- Shredded cheddar cheese
- Cook chicken, save broth.
- Add in additional water if necessary to make 6 c. broth.
- Add in bouillon to taste.
- Add in raw rice, seasonings and vegetables.
- Cook over medium heat till rice and vegetables are tender (about 20 min).
- Add in more liquid as needed.
- Place a handful of Dorito type chips in individual bowls.
- Top with some shredded cheese.
- Cover with warm soup.
- Serve immediately.
