Chili Mac
- 1 pound Ground Beef
- 1 whole Onion, Peeled And Diced
- 1 can (15 Oz. Size) Tomato Sauce
- 1 teaspoon Ground Cumin
- 1/2 teaspoons Garlic Powder
- 1/4 teaspoons Chili Powder, Or To Taste
- Salt And Pepper, to taste
- 1 Tablespoon Olive Or Canola Oil
- 2 cloves Garlic, Peeled And Minced
- 2 Tablespoons All-purpose Flour
- 1 cup Milk
- 1 cup Shredded Cheddar Cheese
- 2 Tablespoons Chopped Scallions
- Salt And Pepper, to taste
- 1/2 pounds Elbow Macaroni, Cooked According To Package Directions
- Brown the ground beef in a large saute pan over medium heat then add the onion and continue cooking for another couple of minutes.
- Add the tomato sauce, cumin, garlic powder, chili powder, salt and pepper and continue cooking for an additional 10 minutes.
- Transfer the mixture to a bowl.
- Into the same pan, add the oil and garlic and saute for a minute just until the garlic begins to soften.
- Mix in the flour and whisk in the milk.
- Continue cooking on low to medium heat for a couple of minutes until the mixture begins to thicken.
- Stir in the cheese, scallions, salt and pepper.
- Add the cooked and drained macaroni into the cheese sauce and then fold in the cooked beef mixture.
- Serve topped with a bit of extra cheese and scallions, if desired.
