Chili Mac

  1. Brown the ground beef in a large saute pan over medium heat then add the onion and continue cooking for another couple of minutes.
  2. Add the tomato sauce, cumin, garlic powder, chili powder, salt and pepper and continue cooking for an additional 10 minutes.
  3. Transfer the mixture to a bowl.
  4. Into the same pan, add the oil and garlic and saute for a minute just until the garlic begins to soften.
  5. Mix in the flour and whisk in the milk.
  6. Continue cooking on low to medium heat for a couple of minutes until the mixture begins to thicken.
  7. Stir in the cheese, scallions, salt and pepper.
  8. Add the cooked and drained macaroni into the cheese sauce and then fold in the cooked beef mixture.
  9. Serve topped with a bit of extra cheese and scallions, if desired.
