BBQ Chicken
- 2 (4 lb. each) chickens
- 2 tbsp. salt
- 2 tbsp. sugar
- 2 tbsp. brown sugar
- 2 tbsp. ground cumin
- 1 tbsp. ancho chile powder
- 1 tbsp. pasilla chile powder
- 1 tbsp. cracked black pepper
- 1 tbsp. cayenne
- 4 tbsp. paprika
- Prepare a wood or charcoal grill and let it burn down to embers.
- Mix all rub ingredients together well and rub the chickens with the mixture.
- Let sit in the refrigerator for 1 hour.
- Place the chickens on the grill, on the side with no fire.
- Cover the grill and vent slightly.
- Cook for 3 hours or until chickens are cooked through.
