Mexican Style Chicken Kien Recipe
- 8 chicken breasts
- 1 (7 ounce.) candied green chilies (divided into 8 portions)
- 1/4 pound Jack cheese, cut into 8 strips
- 1/2 c. fine dry bread crumbs
- 1/4 c. Parmesan cheese, grated
- 1 tbsp. chili pwdr
- 1/2 teaspoon salt
- 6 tbsp. butter
- 1/4 teaspoon cumin
- 1/4 teaspoon cayenne pepper
- Tomato sauce (recipe follow or possibly use salsa)
- Lb.
- chicken pcs to about 1/4 inch thickness.
- Put chicken and Jack strips in center of each chicken pcs.
- Roll up and tuck ends under.
- Combine bread crumbs, Parmesan cheese, chili pwdr, salt, cumin and pepper.
- Dip each in melted butter and roll in crumbs mix.
- Place chicken seam side down in oblong baking dish and drizzle with a little melted butter.
- Cover and refrigerate4 hour or possibly overnight.
- Bake uncovered at 400 degrees for 20 min or possibly till done.
- Serve with sauce.
