Light(Er) Snickerdoodles
- 12 cup light margarine
- 12 cup sugar
- 14 teaspoon baking soda
- 14 teaspoon cream of tartar
- 2 egg whites
- 12 teaspoon vanilla
- 34 cup flour
- 34 cup whole wheat flour
- 2 tablespoons sugar
- 1 teaspoon ground cinnamon

- Beat margarine for 30 seconds, then add sugar, baking soda, and cream of tartar.
- Beat until combined, scraping sides of bowl.
- Beat in the egg whites and vanilla, until combined.
- Beat in flour and chill, covered in freezer for 20 minutes.

- Combine the 2 tablespoons of sugar and 1 teaspoon of cinnamon, shape dough into 1-inch balls, and roll into the cinnamon-sugar mixture until coated.
- Place 2 inches apart on lightly greased cookie sheet.
- Bake at 375 degrees for about 9 minutes, or until the edges are lightly tanned.
