SHAKE'N BAKE Fish and Baked Tomatoes
- FISH:
- 1/2 cup sliced mushrooms
- 1/4 cup finely chopped onion King Sooper's 1 lb For $0.99 thru 02/09
- 1 Tbsp. butter
- 1/2 lb. fish fillets, thawed King Sooper's 1 lb For $7.99 thru 02/09
- 1 envelope Shake'N Bake Fish Coating Mix
- Sauce:
- 1/2 cup sour cream
- 2 Tbsp. Kraft 100% Parmesan Grated Cheese
- 2 tsp. finely chopped parsley
- 4 medium tomatoes
- 2 Tbsp. grated Cracker Barrel Cheddar Cheese
- PLACE mushrooms, onion and butter in 12 x 8 inch (3 L) non-metal baking dish.
- COOK in microwave, covered, on HIGH for 2 minutes.
- Coat fish with coating mix as directed on package, reserving any remaining mix for tomatoes.
- ARRANGE fish with thickest part towards outside edge in baking dish.
- Cover with waxed paper and cook in microwave on HIGH for 3 minutes.
- THOROUGHLY combine sour cream and cheese.
- Cook in microwave, uncovered, on HIGH for 1 minute, or until warm.
- TO serve, spoon warmed sour cream and cheese sauce over fish and sprinkle with chopped parsely.
- TOMATOES:
- REMOVE stem ends from tomatoes; cut each in half.
- Arrange tomatoes with the cut side up, in a circle, in a 9 inch (23 cm) pie plate.
- SPRINKLE remaining coating mix evenly over tomatoes.
- Cook in microwave, uncovered, on HIGH for 2 minutes.
- Sprinkle tomatoes with cheese.
- COOK in microwave on HIGH for 2 more minutes or until tomatoes are hot and cheese is melted.
