Chicken & Mushroom Pie
- 2 packages ready-rolled puff pastry,
- 500 grams diced chicken,
- 150 grams mushrooms, diced,
- 1 small onion, sliced,
- 100 grams butter,
- 1/4 cup self raising flour
- 1 pints milk,
- 1 tsp tarragon,
- 1 egg, for glaze,
- 1 large pie tin,
- preheat oven to gas mark 6.
- line tin with pastry, greasing tin if you wish.
- fry chicken + onions for 5-10 mins.
- spread over bottom of pie.
- add mushrooms.
- melt butter in pan + add flour whilst constantly mixing until you get a paste with no lumps.
- slowly add the milk mixing thoroughly and bring to the boil.
- as soon as it starts to boil, reduce heat to a simmer + add tarragon.
- keep stirring until sauce thickens.
- pour sauce over the chicken mix.
- place second piece of pastry over top and cut away excess pastry round edge.
- pierce middle off pastry + glaze with egg.
- put pie in the oven for 30-45 mins until pastry is golden + risen and the pie is piping hot.
