Chicken & Mushroom Pie

  1. preheat oven to gas mark 6.
  2. line tin with pastry, greasing tin if you wish.
  3. fry chicken + onions for 5-10 mins.
  4. spread over bottom of pie.
  5. add mushrooms.
  6. melt butter in pan + add flour whilst constantly mixing until you get a paste with no lumps.
  7. slowly add the milk mixing thoroughly and bring to the boil.
  8. as soon as it starts to boil, reduce heat to a simmer + add tarragon.
  9. keep stirring until sauce thickens.
  10. pour sauce over the chicken mix.
  11. place second piece of pastry over top and cut away excess pastry round edge.
  12. pierce middle off pastry + glaze with egg.
  13. put pie in the oven for 30-45 mins until pastry is golden + risen and the pie is piping hot.
  14. ENJOY
