Hoppin' John Jambalaya Recipe

  1. Heat bacon grease in large, heavy pot over medium heat.
  2. Add in bell pepper, onions, bay leaves, garlic and parsley.
  3. Saute/fry till onion and pepper are tender.
  4. Add in warm sausage, bacon, black eyed peas and chicken broth.
  5. Bring mix to a boil.
  6. Add in rice; return to a boil.
  7. Cover pot tightly; simmer over low heat 45 min.
  8. Don't lift lid.
  9. After 45 min, check jambalaya; season with salt and pepper to taste.
  10. Fold in green onion.
  11. Sprinkle with several dashes of paprika.
  12. Let stand 10 min before serving.
  13. Yield: 12 servings.
