Sissy's Kentucky Chess Pie - Chess Pie

  1. Preheat the oven to 350 degrees (175 C.).
  2. Completely mix the butter and sugar together.
  3. Add the eggs, one at a time, mixing well after each addition.
  4. Add the vinegar, vanilla and the corn meal and then pour it into the pie crust.
  5. Bake for 45 minutes or until slightly brown on top.
  6. Note: to make a lemon chess pie, just add 1/4 cup (60 ml) of lemon juice and a little of the grated lemon rind, and you may want to add a little more sugar to make it 2 cups (475 ml) of sugar.
