Fava Bean Scafata

  1. In a large pot of salted water, boil the fava beans for 2-3 minutes and drain.
  2. In a large, heavy-bottomed pan, brown the onions in the olive oil over medium heat.
  3. Add the bacon, fry for a few minutes, then add the fava beans and Swiss chard.
  4. Toss to combine and let it cook at low temperature with the lid on for 10-15 minutes.
  5. Add the chopped tomatoes and cook for another 10 minutes, adding hot water if it becomes too dry.
  6. Add salt and pepper to your liking and serve immediately.
