Duck With Sauerkraut And Apple Stuffing Recipe
- 1 (3-4 lb.) duck
- 6 ounce. salt pork
- 1 lg. onion, coarsely minced
- 3 tart green apples
- 3 tbsp. brown sugar
- Salt & freshly grnd black pepper
- Thyme to taste
- 1-2 teaspoon caraway seed
- 1 1/2 lbs. sauerkraut
- Dice salt pork and heat in frying pan till transparent.
- Add in onion and fry.
- Add in apples, peeled and diced, toss with onion and salt pork.
- When golden brown, add in brown sugar, salt, pepper, thyme and caraway seed.
- Remove from heat.
- Drain and mince sauerkraut and toss with apple and onion mix.
- Wash duck inside and out.
- Rub cavity with salt and pepper.
- Stuff with apple, sauerkraut and truss.
- Prick well with sharp fork and place duck on rack in roasting pan.
- Roast in slowly oven, 350 degrees, for 2 1/2 to 3 hrs.
- Prick duck frequently to allow fat to escape.
- Serves 4.
