Quick Chicken Stir-Fry

  1. PREP: Cut chicken into 3/4-inch pieces.
  2. CLEAN: Wash hands.
  3. COOK: Spray large nonstick skillet with nonstick cooking spray.
  4. Heat over medium-high heat.
  5. Add chicken and garlic; stir-fry 4 minutes.
  6. Add frozen vegetables, onion and carrots; stir-fry 3 minutes.
  7. Cover; cook 3 to 5 minutes or until vegetables are tender and internal juices of chicken run clear.
  8. (Or insert instant-read meat thermometer in thickest part of chicken.
  9. Temperature should read 170F.)
  10. Stir in hoisin sauce.
  11. Heat thoroughly.
  12. SERVE: Serve chicken and vegetables over hot cooked rice.
  13. Garnish with fresh cilantro, if desired.
  14. CHILL; Refrigerate leftovers immediately.
