Judy's Carrot Cake

  1. For cake: Combine oil, eggs, sugar, and vanilla.
  2. Add carrots and dry ingredients.
  3. Pour into a greased 9 x 13 inch pan.
  4. Bake at 350 degrees F. for 40 - 50 minutes.
  5. For frosting: Beat first 3 ingredients together and add confectionery sugar about a cup at a time.
