Judy's Carrot Cake
- 1 12 cups oil
- 4 eggs
- 2 cups sugar
- 1 teaspoon vanilla
- 3 cups carrots, shredded
- 1 cup chopped nuts
- 2 cups white flour
- 1 teaspoon salt
- 2 teaspoons baking soda
- 2 teaspoons baking powder
- 2 teaspoons cinnamon
- 8 ounces cream cheese
- 12 cup margarine
- 2 teaspoons vanilla
- 4 12 cups confectioners' sugar
- For cake: Combine oil, eggs, sugar, and vanilla.
- Add carrots and dry ingredients.
- Pour into a greased 9 x 13 inch pan.
- Bake at 350 degrees F. for 40 - 50 minutes.
- For frosting: Beat first 3 ingredients together and add confectionery sugar about a cup at a time.
